Beans (one quart size)

Microwave Instructions:

Place in microwave dish, cover with plastic wrap, heat approximately 3-5 minutes depending on your microwave. (If you wish the beans to have a creamier consistency, stir in 1-3 tbsp. water or milk before cooking.) Stir before serving. Top with grated cheese if desired.

Stove Top Instructions:

Heat beans in a medium pan on low until the beans begin to bubble. (If you wish the beans to have a creamier consistency, stir in 1-3 tbsp. water or milk before cooking.) Stir before serving. Top with grated cheese if desired.

Uncooked Taquitos

Deep Fried Method:

Heat oil to 350 degrees, drop taquitos into oil and cook until crispy. Drain and pat dry on paper towels. Serve with salsa, sour cream, and/or guacamole. Shredded lettuce and diced tomatoes can also be served over the taquitos.

Corn or Flour Tortillas

There are a few ways to heat tortillas:

  1. Place one on a hot flat griddle until it starts to bubble. Flip over every 10 seconds or so. Repeat. Place warm tortillas inside a clean dish towel or inside an El Indio Tortilla Warmer.
  2. Wrap the desired amount in a foil pouch (no more than a dozen). Place pouch in a preheated oven at 350 degrees, about 10 minutes or until warm.
  3. Wrap the desired amount in a clean dish towel or place inside an El Indio Tortilla Warmer (no more than a dozen) and place in the microwave, heat for 30 seconds, then turn over and heat for another 30 seconds. Repeat if needed. Also, shuffle the tortillas so the outside ones are now in the middle. (Use a shorter amount of time for fewer tortillas).

Tamales

Frozen Raw Tamales:

Frozen Raw Tamales must be steamed on the stove in a steamer pot or in a Pressure Cooker. Frozen Raw Tamales cannot be cooked in the oven or the microwave. Steaming times may vary. See below for instructions.

Hot Steamed Tamales:

Hot Steamed Tamales can be cooled and reheated. Follow the instructions below. (30-45 minutes) Do not refreeze previously steamed Tamales.

Pressure Cooker (Instapot):

Place the steamer attachment in the bottom of the cooker. Put the desired amount of tamales inside standing upright. Leave a little space for the steam to circulate. Steam 25 minutes for thawed tamales and 35 minutes for frozen tamales. Let the pressure release naturally from the cooker. Let tamales cool/rest for 10-15 minutes.

Stove Top Steaming Instructions:

Add hot water to the bottom of your steamer pot until the water is just under the bottom of the tamales. Do not submerge the tamales in the water. Bring the water to a boil and then reduce to a high simmer. Do not let the water boil off. To steam from frozen, steam for 75-90 minutes. If the tamales are thawed overnight in the refrigerator, reduce the steaming time to 45-60 minutes. Let the tamales cool/rest for 10-15 minutes before eating.

Microwave Instructions:

For cold previously steamed tamales ONLY. Wrap one or two tamales in a damp/wet paper towel and place inside a Ziplock plastic bag, seal the bag almost completely and place in the microwave. Cook for 2-3 minutes, turning over after each minute. Let the tamale rest/cool for a minute. Carefully remove the tamale from the Ziplock bag, remove the wrapping and the corn husk before serving. Increase the cooking time when heating two or more tamales. (Frozen Raw Tamales can NOT be cooked in the microwave!)

Enchiladas

Microwave Instructions:

To heat one enchilada, place in microwave dish, cover with plastic wrap, and heat approximately 2-3 minutes. Adjust heating time according to the number of enchiladas being heated. Chicken or Beef enchiladas will take a minute or two longer to heat than cheese. (Try not to overheat, as the cheese will run out.)

Oven Instructions:

Preheat the oven to 350 degrees, place in a baking dish (aluminum or glass). Bake 15-18 minutes uncovered. Chicken or Beef enchiladas will take a few minutes longer to heat than cheese. (Try not to overheat, as the tortillas will become hard and the sauce will dry out.)

Chile Relleno

Microwave Instructions:

Place one Chile Relleno in a microwave dish, cover with plastic wrap, and heat approximately 2-3 minutes. Adjust heating time depending on the number of Chile Rellenos you are heating.

Oven Instructions:

Preheat the oven to 350 degrees, place Chile Relleno in a baking dish, and heat covered for 10-12 minutes.
